Our September Cheese of the Month comes from Belton Farm in Whitchurch, just 20 miles from our Little Budworth farm shop. Stretching back over three generations, the Beckett family have championed farming and cheese making traditions right in the heart of Shropshire. At Belton Farm they pride themselves on their passion for making the very best tasting cheese by concentrating on the quality, distinctive taste and depth of flavour.

The team of master cheese makers combine their considerable experience and expertise with many of the handcrafted techniques used by their predecessors and where appropriate the latest technology to make cheese of great quality and consistency. The cheese is then matured in purpose built cold stores and is carefully selected to exacting specifications by Belton’s own highly skilled, experienced graders.

At Belton Farm they only use the very best, locally sourced, ingredients. The milk comes from Belton Farm’s dedicated group of local dairy farmers who pride themselves on the quality of their grass-fed milk, along with the health and welfare of their cows. They source their salt from the historic local Cheshire salt mines, but their bespoke cultures (used to start the cheese making process) are unique to Belton Farm and a closely guarded secret!

Red Fox Cheese

An aged Red Leicester with a cunningly unexpected crunch. It has a russet colour and a wonderful rugged mouth-feel with a hint of ‘crunch’ which the cheese has developed through watchful maturation then leaves the palate with a lingering flavour and desire for more. It has an intense and complex blend of sweet, savoury and distinctively nutty flavours.

White Fox Cheese

An aged White Leicester, a modern British cheese offering a new experience to cheese lovers looking for something a little bit different. Slowly matured, White Fox develops a ‘crunch’, giving a rugged mouth feel and depth of flavour that is tough to beat. This delicious cheese is aged to perfection and extremely versatile. Try it melted on garlic Ciabatta with some Tracklements Caramelised Onion Relish – delicious!
