Sparkenhoe Red Leicester
The Hollies Cheese of the Month this November is Sparkenhoe Red Leicester. Sparkenhoe Red Leicester is a traditional Red Leicester cheese made from the unpasteurised milk of 150 Holstein-Friesian cows, a true revival of a fabulous cheese. The flavours of this cheese are nutty and sweet with a citrus finish. To create this unique cheese, it is cloth bound and matured for 6 months on beech shelves. Every single piece of this cheese is freshly cut and uniquely wrapped.
This cheese is made by David and Jo Clarke on their farm in Leicestershire. This cheese is unique and is like no other, as it is the only Red Leicester in England that is unpasteurised. The addition of natural annatto gives the cheese its deep orange-red colour.
The Clarke’s recommend their cheese “on toast, with some raw onion and tomato slices piled on top, then everything grilled.” Sounds delicious!
Some members of our Deli team at Little Budworth recently visited the Sparkenhoe farm and got involved with the cheese making process.
