Chocolate & Avocado Mousse

Serves 4 – A very simple delicious treat

Ingredients

1 avocado

200ml coconut milk

2 TBSP maple syrup

5 fresh raspberries

3 TBSP cocoa powder

1 TSP desiccated coconut for decoration

Himalayan pink salt

 

Method

Place the avocado, cocoa powder, coconut milk, maple syrup and pinch of salt into a bowl.  Blend with a hand blender until smooth

Stir through half the raspberries

Spoon into ramekins or small glasses

Place in the freezer for 20 minutes

Sprinkle with coconut, the remaining raspberries and serve.
